I love making this meal! It is so easy to prepare and the crockpot does all the cooking for you! This dish is also very versatile. The meat can be used for tacos, chicken sandwiches, or just a good ol' fashion chicken dinner with mashed potatoes and veggies on the side.
Another great thing about this meal is that it is incredibly cheap to make! I wait until I can get a whole chicken on sale (.69-.99 cents a pound), which makes the cost of the chicken less than 5 bucks!
The last time I made this recipe, I ended up making three meals from it: a piece of chicken with potato salad on the side, chicken tacos, and chicken salad sandwiches. Then, to top it all off, I made Homemade Chicken Stock with the carcass! Talk about some cheap eating!

First, clean the chicken and remove the giblets from the inside. If I plan to freeze the chicken for a later meal, I do this step, then I pat it to dry and place it in a freezer bag and stick it in the freezer.
Next, place the cleaned chicken in the crockpot and sprinkle the seasonings on top. Set your crockpot on low for 4-8 hours.

Versatile Crockpot Chicken
1 roasting chicken
4 tsp salt
2 tsp paprika
1 tsp onion powder
1 tsp thyme
1 tsp pepper
1 tsp garlic powder
Remove gilblets and clean chicken. Place Chicken in Crock Pot
Combine seasonings in a bowl and sprinkle on top of chicken
Cook on low for 4-8 hours
Serving options:
Mashed potatoes, gravy and veggies
Potato salad, baked beans and corn on the cob
Chicken tacos with refried beans and Mexican Rice
Chicken salad sandwiches
Add the meat to soup or dumplings
When the meat has been picked over, use the carcass to make Homemade Chicken Stock
