Lemony-Strawberry Shortcakes

This is a delicious, easy to make dessert for those warm summer nights! We have strawberries growing in the garden every summer and it's always so fun to make them into a delicious treat...As if they aren't already delicious enough!




 

First you're going to start by adding all the dry ingredients together.


Then, cut the butter into small cubes and gently stir into the flour. Be sure to keep the butter in whole pieces! When the butter melts inside the dough, it will be replaced with air pockets, creating a flaky shortcake. Yummm!



Next, combine the remaining ingredients in a separate bowl. Then, slowly stir the wet into the dry until combined...Still keeping the butter whole! Work fast so the butter doesn't melt! Form dough balls about 1 1/2 inches in diameter and drop onto a cookie sheet. Now sprinkle each one with sugar!



While these are baking, start on the strawberry filling! Chop the strawberries and combine them with sugar and lemon juice. Put them in the fridge to allow the strawberries to marinate.



Just before assembling the shortcakes, make the whipped cream. Beat the cream, sugar, and vanilla together until high peaks form... this should take about two minutes or so.



Now, cut the shortcakes in half. Put a dollop of whip cream on top of the bottom shortcake, then a layer of strawberries, add one more dollop of whipped cream, and top it with the other half of the shortcake. Now your Lemony-Strawberry Shortcake is ready to be enjoyed!




 

Lemony-Strawberry Shortcakes

1 1/2 cups of flour

1/3 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/3 cup cold butter, cubed

1/2 cup plain greek yogurt

3 tablespoons milk

1 egg

1 teaspoon vanilla

1 teaspoon lemon zest

sugar for sprinkling on top


  1. Combine all dry ingredients

  2. Dice cold butter into small cubes about 1/2 inch by 1/2 inch

  3. Toss butter into flour mixture and stir until all butter pieces have been covered

  4. In a separate bowl, combine yogurt, milk, egg, vanilla and lemon zest

  5. Pour wet ingredients into dry and stir until combined.

  6. Form dough balls about 1 1/2 inches in diameter and drop onto cookie sheet makes about 14

  7. Cook at 400 degrees for 12 minutes


Strawberries

1 pound of strawberries

2 Tablespoons granulated sugar

1 Tablespoon lemon juice


  1. Chop strawberries to desired size

  2. Add sugar and lemon juice

  3. Refrigerate for one hour or until ready to use


Whipped Cream

1 cup heavy cream

2 Tablespoons sugar

1/2 teaspoon vanilla


  1. Combine all ingredients

  2. Using a whisk attachment, beat until firm peaks form (should take about 3 minutes)


Assembling the Shortcakes

  1. Cut the shortcakes in half

  2. Put a dollop of whipped cream on top of the bottom shortcake

  3. Add a layer of strawberries

  4. Add one more dollop of whipped cream

  5. Top with the other half of the shortcake
