Mexican Style Rice

My mom has been making this recipe for as long as I can remember! It is delicious, so easy to make, and cheap! I love making this rice when I make: tacos, enchiladas, burritos, tamales, chili relleno casserole...really, it is good with all Mexican food!


When I make this rice, I usually decide to use at as leftovers in the following days, or freeze half of it so it makes my next Mexican dish easier and CHEAPER to make!


 

First, grab a saucepan and brown the rice in the vegetable oil. Be sure to keep an eye on it and stir occasionally. No one likes burned rice!


After the rice is browned, add the water (or chicken stock), tomato sauce, salt, green bell pepper, and onion. Bring rice to a boil, reduce heat and cover.


Adding chicken stock will give it an extra boost of flavor and will result in a more authentic Mexican taste.


Let simmer for 30 minutes and be sure not stir! I know this part it hard, but this step will make your rice fluffier. After the 30 minutes are up, you can finally give it a good stir and serve!

Pair this rice with Tasty Refried Beans and serve with any of your favorite Mexican dishes.


 



Mexican Style Rice


1 1/2 cup rice

4 Tablespoons vegetable oil

2 cups water or chicken stock

1/2 green bell pepper

1/2 medium onion, diced

1 tsp salt

1 8oz can tomato sauce


  1. In a medium sized saucepan, brown rice in vegetable oil.

  2. Add water, salt, onion, bell pepper and tomato sauce.

  3. Bring to a boil

  4. Reduce heat, cover and cook on low for 30 minutes. Do not stir.

  5. When done cooking, give it a stir and serve.

 

This recipe is my go-to when making any Mexican dish. It is easy, cheap, and delicious! Pairs well with Tasty Refried Beans, tacos, enchiladas, burritos... the list could go on forever!
